Simple Homey Breakfast

Breakfast is the first meal of the day. A balanced breakfast is especially important to help you last through the day, but sometimes, being able to have a filling meal at home is difficult. And so, we have chosen three dishes that are quick and easy to cook during the early morning rush.

Basic Giniling (Dishkarte, p. 224)

Tortang Giniling

Ingredients:

– ½ kg. giniling
– 1 egg
– 1 Tbsp. sugar
– ¼ cup flour
– 1 Tbsp. UFC Garlic Powder
– ½ cup carrots, grated
– 1 cup onion, minced
– 4 Tbsps. Silver Swan Soy Sauce
– 2 Tbsps. Datu Puti Oysterrific Oyster Sauce
– UFC Iodized Salt and UFC Ground Black Pepper, to taste

Procedure:

1. Put all the ingredients in a mixing bowl and mix thoroughly until it becomes sticky.

2. Use the mixture in the desired dish.

Longganisang Hubad (Simpol the cookbook, p. 56)
It is best to prepare this at least one day before you decide to cook it. You can also prepare it a week before to maximize its rest time.

Longganisang Hubad

Ingredients:

Set A:
– ½ kg ground pork
– 1 Tbsp. Datu Puti Soy Sauce
– 1 Tbsp. Datu Puti Patis (fish sauce)
– 1 Tbsp. Datu Puti Vinegar
– 2 Tbsps. garlic, minced
– 1 tsp. cracked black pepper
– ½ tsp. dried oregano (optional)
– 1 pc. bird’s eye chili or chili flakes, chopped (optional)
– ¼ cup brown sugar
– 2 Tbsps. achuete oil (annatto oil) or 2 Tbsps. paprika powder

Procedure:

1. Place all the ingredients in a mixing bowl and mix thoroughly. Chill overnight to cure. Next day, form it into the desired longganisa shape and chill before cooking.

2. To cook: Heat a little oil in a pan over medium flame, and cook the longganisang hubad in batches until the pork is slightly caramelized.

Taiwanese-Style Breaded Pork Chop (Simpol the Cookbook, p. 93)

Taiwanese-Style Breaded Pork Chop

Ingredients:

Set A:
– 1 kg. pork chops, skin removed (around 5 to 6 pcs.)
– 3 cloves garlic, minced
– 2 Tbsps. Datu Puti Oyster Sauce
– 1 Tbsp. calamansi juice
– 1 Tbsp. five-spice powder

Set B:
– ½ cup flour
– 3 Tbsps. cornstarch
– 1 tsp. baking powder
– ½ tsp. salt
– ¼ Tbsp. black pepper
– ½ cup cold water

Set C:
– 1 cup flour, for dredging
-Oil, for frying

Procedure:

1. Place each cutlet between sheets of plastic wrap. Using the flat head of a meat mallet, pound the pork to a thickness of ¼-inch. Season both sides of the pork with a mixture of garlic, oyster sauce, calamansi juice, and five-spice powder.

2. In a bowl, combine the dry Set B ingredients, then stir in cold water. Don’t overmix; it’s ok to have lumps. Create an assembly line to make the batter procedure easy. Start by working the pieces one at a time. Remember to use one hand for the dry ingredients and the other for the wet.

3. Coat the pork evenly with flour and shake off the excess flour. Then, using the other hand, dip the floured pork in the batter, coating evenly, and let the excess drip off. Do this separately for all the pork chop pieces.

4. Have a thick-bottomed frying pan ready with oil around ¾-inch deep, preheated around to around 180 °C. Carefully place the pork chops into the hot pan. Make sure you lay down the chops in a direction opposite to you, so it does not splatter on you in case you drop it. You may cook at least two chops at a time, granted that both chops lie flat on the pan. Fry them over medium heat for 4 to 5 minutes on each side. Once they are golden in color on both sides, drain it on a kitchen towel and let it rest for at least 2 minutes.

5. To serve, cut it into strips of one-inch wide. Arrange them on a warm platter with your choice of dipping sauce and sidings.

Whether you are in a hurry to leave, or simply do not want to spend too much time on your meal during the morning rush, it would still be a great option to at least have something to munch on. With these choices, breakfast will surely become a quick and easy meal that the whole family can eat wherever and whenever.
