Serves 3 to 4.
Ingredients:
Set A:
- 800 to 900 grams beef shanks (bulalo)
- Water, for boiling
- 1 tablespoon salt (or 1 pack seasoning granules)
- 1 piece onion, chopped
- 1 teaspoon black pepper
Set B (Gravy):
- 4 tablespoons butter
- 4 tablespoons flour
- 2 cups beef stock (from boiling liquid)
- 2 tablespoons soy sauce
- 1 teaspoon whole peppercorns
Set C:
- 2 tablespoons margarine or butter, or as needed
- Fried garlic, for garnish
Chef Tatung’s Tips:
- You can add mushrooms to the gravy or add as a garnish. Just sauté in a little butter and season lightly with salt.
- You can add 2 tablespoons of cream to the gravy for more richness or some dried herbs for more flavor.
