Serves 3 to 4.
INGREDIENTS:
Set A:
- 1 kilogram small bangus (milkfish), cleaned with heads and tails cut off
- 2 tablespoons rock salt
- Oil, for frying
Set B:
- 1 piece carrot, sliced into rounds
- 1 head garlic, peeled
- 1 teaspoon salt
- 4 pieces laurel leaves
- 6 pieces clove spice
- 1 tablespoon whole peppercorns
- 6 pieces dried or fresh chilies
- ½ cup pickles, cut into rounds
- ¼ cup olives (optional)
- ½ cup vinegar
- 2 cups canola oil, add more, if needed
- 3-4 cups water
Chef Tatung’s Tip:
- If not using a pressure cooker, you can just simmer the milkfish in a pan, submerged in oil, until the fish is tender.
- Before frying, make sure to pat-dry the fish with a kitchen towel to remove excess water.
