Steamed Spareribs

Ingredients
  

Marinate:

  • 1 kg. pork spareribs
  • 3 Tbsps. soy sauce
  • 3 Tbsps. oyster sauce
  • 2 Tbsps. rice wine
  • 3 Tbsps. sugar
  • 3 cloves garlic, grated
  • 1 Tbsp. ginger, grated
  • 2 Tbsps. sesame oil
  • 4 Tbsps. cornstarch
  • Salt and pepper

Added Flavor:

  • ¼ cup black beans
  • ¼ cup leeks, chopped
  • 2 pcs. red chili, chopped

Instructions
 

  • Season the pork spareribs with salt, baking soda, and cornstarch. Mix it all together until each piece is properly coated. Leave it to marinate for 10 to 15 minutes. Set aside.
  • After letting the pork marinate, rinse off the salt, baking soda, and cornstarch. Continue to rinse it until the water runs clear.
  • Once the pork has been rinsed, season with soy sauce, oyster sauce, seasoning granules, rice wine, sugar, and sesame oil. Toss it all together and let it soak in all the flavors. When it has absorbed the marinade, add the cornstarch. Mix, then season with black pepper. Set aside to let it marinate.
  • Slice the ginger into thin strips. Chop the red chilies. Add it to the marinating pork with minced garlic and black beans. Mix it all together.
  • Arrange the pork in a bowl. Place it in the steamer. Cover and cook it for 45 minutes to 1 hour. Serve over freshly cooked rice.
