An elegant, sweet layered dessert made with lady
fingers soaked in espresso. We used cream cheese instead of mascarpone to make this recipe.
INGREDIENTS:
Set A:
5 egg yolks
3/4 cup granulated sugar
2 cups cream cheese, at room temperature
1 cup whipping cream
2 tsps. vanilla extract
Set B:
1 cup espresso
1/4 cup rum
20-25 pcs. lady fingers
Set C:
Unsweetened cocoa powder, for dusting
Procedure:
A. Combine egg yolks and sugar and beat the mixture until light and frothy while cooking in a double boiler. Allow to cool before adding the cream cheese and whipping cream and blend until fluffy.
B. In a bowl, combine espresso and rum. Dip the lady fingers in the mixture, and arrange the soaked lady fingers to cover the bottom of serving dish. Spread a layer of the cream cheese mixture and add another layer of lady fingers. Repeat the process for two more layers. Cover the last layer of lady fingers with cream cheese mixture and tap lightly to release air pockets.
C. Dust top with cocoa powder and place in the chiller to set before serving.
