Hamonadong Manok

Ingredients
  

For the Chicken:

  • 1 whole chicken
  • Season with salt

Sauce:

  • 5 cloves garlic
  • 1 pc. onion
  • 1 thumb ginger
  • ½ cup vinegar
  • ½ cup soy sauce
  • ¼ cup banana ketchup
  • 2 cups water
  • 1 can pineapple chunk
  • ¾ cups sugar
  • 3 pcs. star anise
  • Slurry, to thicken
  • 1 pc. red bell pepper, sliced

Instructions
 

  • Dry brine the chicken with salt. Set aside.
  • Smash the garlic. Chop the onion in four. Slice two thin slices of ginger. Stuff it all inside the chicken.
  • Place the chicken in the pot. Pour in the vinegar, soy sauce, banana ketchup, water, pineapple juice and chunks, sugar, and star anise. Stir it all together. Cover and turn on the heat. Leave it to cook for 45 - 50 minutes depending on the size of the chicken. Just make sure to adjust the cooking time based on the size.
  • When the sauce starts boiling, lower the heat so it does not overflow. Make sure to baste it every noe and then so every part of the chicken soaks in all the flavors of the sauce.
  • Make a slurry. Mix cornstarch and water until the cornstarch has dissolved. Pour it into the pot.
  • Julienne the red bell peppers. Add it to the pot with the remaining pineapple chunks. Season with black pepper. Leave it to cook for a few more minutes.
  • Once cooked, arrange it on a plate with the sauce.
