This cookie bakes in the most comforting aromas, such as apple, butter, and cinnamon. The oats not only make it healthier but also give the cookie its texture. It’s almost impossible to resist when you are around it.
Ingredients:
Set A:
1/2 cup Granny Smith apple, grated
1 cup whole rolled oats
Set B:
1 cup all-purpose flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1 Tbsp. cinnamon powder
1/2 cup walnuts, chopped
1 cup raisins
Set C:
3/4 cup unsalted butter, at room temperature
1/2 cup granulated sugar
1/2 cup brown sugar
1 whole egg
1 tsp. vanilla extract
PROCEDURE:
A. Combine rolled oats and grated apple in a small bowl. Set aside to let oats absorb the liquid.
B. Sift the Set B ingredients into a bowl and mix everything.
C. Beat butter and two kinds of sugar until fluffy and sugar is dissolved. Then add egg, followed by vanilla extract. Add in Set A mixture and mix until just combined. Scoop into a parchment-lined baking pan and bake.
