This used to be a fancy dessert served during parties in my childhood. It is yummy and also very easy to make. Our version had a raisin on top. You can do that if it pleases you.
INGREDIENTS:
Set A:
3/4 cup unsalted butter, melted
1/2 cup granulated sugar
2 whole eggs
1 can condensed milk (396 ml)
1 tsp. salt
Set B:
2 cups desiccated coconut
PROCEDURE:
A. In a bowl, combine the Set A ingredients and beat until frothy, and sugar is dissolved.
B. Add in the desiccated coconut and mix until well combined. Then pour into the greased muffin pan, then bake. To check doneness, insert a toothpick to check if it comes out clean.
