Make Asian sandwiches using steamed buns for a change. Fill it with just about anything your heart desires. Use this dough recipe to make siopao as well.
Ingredients:
Set A:
2 1/2 cups bread flour
1/2 cup cake flour
1 Tbsp. instant yeast
3/4 cup granulated sugar
1 tsp. salt
1 tsp. baking powder
Set B:
1 1/2 cups water
1 Tbsp. vinegar
Set C:
1/4 cup shortening
Set D:
Your choice of filling
Procedure :
A. In a mixer with a hook attachment, combine all dry ingredients and mix until combined.
B. Turn on the mixer and slowly add water and vinegar. Mix until you have a smooth dough.
C. Add the shortening and mix at medium speed for 5 minutes. Then scrape off the sides of the bowl and allow the dough to rest for 10 minutes, before mixing again for another 10 minutes, or until the dough has fully developed. Transfer to a work surface and divide into 10 to 12 pieces, then shape the dough into balls. Rest for 15 minutes. Then flatten into ovals and make a dent in the middle of the dough and fold into half-moons. Let it rise for 10 to 15 minutes and steam over medium heat for 30 to 35 minutes.
D. Fill the mantou buns with your choice of fillings.
