“Paksiw na Bangus” is a comfort food to most Filipinos. This dish is made with bangus (milkfish) simmered in vinegar and spices such as ginger, onions, garlic, with combination of vegetables like talong (eggplant) and ampalaya (bitter melon). Easy to cook, very satisfying and budget-friendly meal.

TRIVIA: As the palayok’s alkaline composition neutralizes the acidity of the vinegar and other acids, the clay pot also projects the natural sweetness of the ingredients.

INGREDIENTS

▪1 cup vinegar
▪1 cup water
▪1 large milkfish
▪1 piece onion
▪3 thumbs ginger
▪4 cloves garlic
▪1 1/2 teaspoons salt
▪1 piece eggplant
▪1 cup ampalaya
▪3 pieces finger chilies
▪1 teaspoon peppercorns
▪1 teaspoon oil
