A light and crispy dessert topped with whipped cream and assorted fruits. Dazzle it more with an orange curd.
INGREDIENTS:
Set A:
6 egg whites
1/2 tsp. cream of tartar
1/4 cup sliced almonds
Set B:
3/4 cup Powdered Sugar
2 Tbsps. cornstarch
ORANGE CURD
INGREDIENTS:
Set A:
1 cup orange juice
1 tsp. orange zest
1 tsp. lemon zest
6 egg yolks
1/2 cup granulated sugar
1 Tbsp. cornstarch
Procedure:
A. Beat egg whites with cream of tartar until
fluffy.
B. Combine cornstarch and powdered sugar then add gradually to the egg whites. Beat until you reach stiff peaks. Pour into greased, parchment-lined baking sheet and shape into a volcano with a large crater in the middle. Sprinkle with sliced almonds and bake.
Assembly:
Finish it with whipped cream, vanilla custard on the center then top with choice of fruits or toppings.
ORANGE CURD
Procedure:
A. In a saucepan, mix set A ingredients and cook gently while mixing constantly until thickened and smooth. Do not allow the mixture to boil.
B. Turn off heat and add the butter and mix until well combined and your curd is smooth and glossy. Chill before using.
