This is another holiday treat that is heartwarming because of all the warm spices added to it. Try this cookie in place of graham crackers for your baked cheesecake recipe.

INGREDIENTS:
Set A:
1 3/4 cups all-purpose flour
2 Tbsps. cornstarch
2 tsp. cinnamon powder
2 tsp. baking soda
1/2 tsp. salt
1/2 cup toasted peanuts, chopped

Set B:
3/4 cup unsalted butter, at room temperature
1 cup brown sugar
1 cup granulated sugar
1 whole egg
2 Tbsp. peanut butter
2 Tbsp. ginger, grated

PROCEDURE:
A. Sift the Set A ingredients into a bowl and mix everything.

B. In a mixer, beat butter and both sugars until fluffy and sugar is dissolved. Add the other Set B ingredients and mix. Add the Set A mixture and mix until just combined. Scoop into a greased parchment-lined tray and bake for 10 to 12 minutes.

Tip: To make your cookies crunchier, use chunky peanut butter instead of creamy peanut butter.
