A light cupcake that is very attractive because of its bright red color. Your kids will surely love it.
INGREDIENTS:
Set A:
2 cups all-purpose flour
2 tsps. unsweetened cocoa powder
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
Set B:
1/2 cup palm oil
1 cup granulated sugar
2 whole eggs
1 cup full cream milk
1 tsp. vinegar
1 Tbsp. red liquid food color
2 tsp. vanilla extract
BASIC CREAM CHEESE FROSTING
INGREDIENTS:
1/4 cup unsalted butter
1 cup cream cheese, at room temperature
3/4 cup powdered sugar
1/2 tsp. salt
Procedure:
A. Sift the Set A ingredients into a bowl and mix everything.
B. In a bowl, combine all Set B ingredients and mix until sugar is dissolved. Add in the Set A mixture and mix until just combined. Pour into muffin pans lined with cupcake liners, and bake. To check doneness insert a toothpick to check if it comes out clean. Top with the desired frosting.
