Okoy is our Pinoy version of shrimp fritter. Okoy has been a popular street food in the Philippines usually sold on the street corners and commonly served during merienda. Like lumpia, okoy have many variations using a variety of other ingredients

INGREDIENTS:

Set A:

  • ½ cups rice flour
  • ½ cups flour
  • 1 ½ tablespoons salt
  • 2 tablespoons sugar
  • 1/2 tablespoon black pepper
  • 1 teaspoon baking powder
  • 1 cup ice-cold water
  • 4 tablespoons annatto oil

 

Set B:

  • ¾ cup sweet potato
  • 3/4 cup squash
  • 1 whole onion
  • 1 stalk leaks
  • 1 cup beans sprout
  • 1 cup shrimp
