Pancit Pusit originated from the province of Cavite. It is also known as “Pancit choco n su tint-a” that literally means “noodle with squid in its own ink”. The recipe was invented because Caviteño fishermen needed to cook the freshly-caught squids with noodles to be able to extend it and have enough food for the whole family. Nowadays, not a lot of people cook this version of Pancit anymore.
INGREDIENTS:
Set A:
- ½ cup water
- ½ kilo squid
Set B:
- ½ kilo pancit bihon (rice noodles)
- Water
Set C:
- 3 tablespoons oil
- 5 cloves garlic
- 1 piece onion
- 2 stalks celery or kintsay
- 3-4 tablesoonps fish sauce
- ¼ cup Vinegar
- 4 pieces bay leaves
- Pepper
Toppings:
- 1 cup chicharon
- 2 pieces kamias
- fried garlic
- celery leaves
