Binakol originated from Western Visayas specifically in Aklan Province. It is very similar to tinola but instead of rice washing, it uses coconut juice for the soup that gives the binakol a flavorful and sweet taste. Traditionally, it was cooked in bamboo tubes or coconut shelves. Nowadays, you can use any meat or seafood in your binakol.
INGREDIENTS:
Set A:
- 1 tablespoon oil
- 2 tablespoons ginger
- 1 piece onion
- 1 kilo chicken
- 1 tablespoon salt
Set B:
- 3 cups coconut juice
- 2 stalk lemongrass
- 2 cups coconut meat
- 2 tablespoon fish sauce
- 1 bunch kangkong
