Sweet, light, and spongy biscuits that are interestingly shaped to resemble fingers.
INGREDIENTS:
Set A:
1 3/4 cups all-purpose flour
1/4 cup cornstarch
3/4 cup granulated sugar
1/2 tsp. salt
8 egg yolks
1 tsp. vanilla extract
Set B:
8 egg whites
1/4 tsp. lemon juice
1/2 cup granulated sugar
Set C:
1 cup Powdered Sugar, or as needed
Procedure:
A. Sift all dry ingredients and add egg yolks into a bowl. Mix until your batter is smooth. Do not overmix.
B. In a separate bowl, beat egg whites and lemon juice until fluffy and gradually add sugar. Continue beating until stiff peaks. Fold egg foam into the batter and mix until just combined.
C. Pipe batter into a parchment-lined baking sheet and make 3 1/2-inch (9 cm) strips. Keep them separated. Dust generously with powdered sugar.
