Lomi originated in Lipa, Batangas back in 1968. The recipe was invented by the restaurant owner, To Kim Eng. It is such a significant part of Batangueños’ lives. In every corner of Lipa City, you can find a restaurant or carinderia that offers Lomi. They also celebrate Lomi Festival every June, alongside the capital’s Foundation Day itself.
INGREDIENTS:
Set A:
- 1 cup flour
- 1⁄2 teaspoon salt
- 1 egg
- 2 tablespoon oil
- 1⁄2 teaspoon lihiya
- 4 tablespoon water
Set B:
- 2 tablespoon cooking oil
- 5 cloves garlic
- 1 medium-size onion
- 6 pieces kikiam
- 1 cup pork belly
- 1⁄2 cup pork liver
Set C:
- 6 to 8 cups pork broth
- 2 2 tablespoon cornstarch
- 2 tablespoon water
- 4 Tablespoon soy sauce
- 2 piece eggs
Set D:
- 2 tablespoon spring onion
- 1 cup chicharon
- 1/2 cup chopped fried pork
- 1 hard-boiled egg
