Bulalo originated from the province of Batangas. The province is known for the cattle-raising industry. The star of bulalo is beef marrow, sometimes called utak because of its texture. It is crucial to cook the marrow gently if you want to keep all that marvelous fat intact. Vigorously boiling it will disintegrate the marrow into plain sebo or oil.
INGREDIENTS
Set A:Â
- 1 ½ kilo beef shank
- 6 cups of water
- 2 tablespoons salt
- 1 tablespoon whole peppercorn
- 2 pieces onion
- 1 thumb ginger
Set B:
- 1 piece sweet corn
- 4-6 tablespoon fish sauce
- 1 teaspoon MSG
- 1/2 piece cabbage
- 1 bunch pechay
