The term Escabeche is an Arabic word which means ‘soaked in vinegar’. And due to Arabic invasion in Spain, the Spaniards adapted this recipe and brought it in the Philippines during the Spanish occupation.

Many Filipinos are confused between sweet and sour, and escabeche. The difference is that escabeche should not be sweet and must be based in vinegar.

INGREDIENTS:

Set A:

  • 1 piece maya-maya
  • salt
  • cooking oil

Set B:

  • 5 cloves garlic
  • 1 medium red onion
  • 1 medium red bell pepper
  • 1 cup white vinegar
  • 1 teaspoon whole peppercorn
  • slurry (cornstarch + water)
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1/2 cup cooking oil
  • 2 tablespoon soy sauce
