Igado comes from the Spanish word “higado” which means “liver”. There are many versions of this dish, which not only is popular during fiestas, but also on special occasions. Not only is it perfect as a viand with rice, but it is also a favorite pulutan. The recipe has a semblance with the menudo, but here, the iron rich liver takes the limelight.

INGREDIENTS

Set A:

  • 1 tablespoon garlic
  • 1 whole onion
  • 1/2 kilo pork
  • 3-4 pieces dried bay leaves
  • 5 tablespoons vinegar
  • 6 tablespoons soy sauce
  • 1/4 kilo pig’s liver

Set B:

  • 1 piece carrot
  • 1 piece red bell
  • 1 cup chicken stock
  • 1/2 cups green peas
