Saing is a manner of cooking where you simmer food until the liquid fully evaporates as the dish cooks, such in the case of rice. Today, we will learn how to make saing — not kanin, but sinaing na tulingan!

Sinaing na tulingan is a popular fish recipe in southern tagalog provinces. It originated from the coastal towns of Batangas. Traditionally, cooking sinaing na tulingan would take 6-8 hours until the fishh bones become brittle and edible. The banana leaves not only add a nice anoma to the dish but also keeps the fish heads from falling off while cooklinng. Each provinces has their own way of cooking it. Some with coconut milk, other use sampaloc for souring while others fry before serving.
But here’s a quicker way of preparing the sinaing na tulingan with the use of a pressure cooker.

- 1/2 kilo tulingan
- salt
- banana leaves
SET B:
- 1/2 cup pork fat
- 6 cloves garlic
- 2 thumbs ginger
- 3 pieces long green chilies
- 1/2 teaspoon whole black pepper
- 2 cups water
- 1/2 cup vinegar
