Siningang is a tagalog word that is used to describe a soup soured by a fruit that the season provides. Some variants are more popular than others yet there are some that are rare because ingredients are harder to find which makes it more special.

Here’s a version of sinigang sa bayabas. It has also earned the moniker Sinigang sa putok because of the sweet-sour and slightly funky aroma the ripe fruits it emits.

INGREDIENTS

Set A:

  • 1 cup water
  • 8 pieces guava

Set B: 

  • oil
  • 1 small onion
  • 1 thumb ginger
  • 6 pieces tomatoes
  • 6 cups rice washing
  • 1 bangus (milkfish)
  • salt
  • ½ piece radish
  • 3 pieces long beans
  • 4 pieces okra
  • 1 eggplant
  • 1 piece long green chili
  • 1 cup kangkong
  • 2 tablespoon fishsauce
  • 6 pieces calamansi
