Corn or mais was brought in the Philippines from Mexico through the Galleon Trade. Since then, the Filipinos started to plant and propagate corn in their own farmlands and backyards. Nowadays, corn is one of the most important agricultural products of the country next to rice. Because of its abundance and availability, many dishes with corn were created by the Filipinos ranging from main dishes to snacks.

Here is one of the famous corn recipes in the Philippines, Suam na Mais.

INGREDIENTS:

Set A:

  • 1 cup tagalog corn
  • 1 cup water

Set B:

  • oil
  • 1 tablespoon garlic
  • 1 tablespoon onion
  • 3 thumb size ginger
  • 3 cups water
  • 1/4 kilo pre-cooked clams
  • 2 tablespoons fish sauce
  • 2 cups ampalaya leaves
