Chicken Halang-Halang is a traditional Visayan dish. Halang-halang literally means “spicy-spicy.” It is very similar to tinola, but the difference is that Halang-halang has a sour flavor because of vinegar and a kick of spiciness from the chilies. Like most Filipino dishes, there are different ways to cook halang-halang. Others add coconut milk while others don’t.
INGREDIENTS:
Set A:
- 3 tablespoons cooking oil
- 1 teaspoon garlic
- 1 medium onion
- 1 thumb ginger
- 1 kilo chicken
- Salt
Set B:
- 1⁄2 cup sukang tuba
- 3 cups water
- 1 small green papaya
- Black pepper
- 2 pieces lemongrass
- 2-3 pieces red chilies
- 2 tablespoons fish sauce
