Dinakdakan is a popular Ilocano dish. It is the epitome of finger food or pulutan in the Ilocos region.
It is very similar to Pampanga’s sisig because it’s made up of a char-grilled pig’s face.
But unlike the Sisig of Kapampangans, Ilocanos put pig’s brain in Dinakdakan that makes dish creamy and gives it a unique flavor.

INGREDIENTS:

Set A:

  • 1/2 kilo pork face
  • 1/2 kilo pork ears
  • 1 whole onion
  • 3 cloves garlic
  • 5 pieces laurel leaves
  • 2 tablespoon soy sauce
  • 1 teaspoon cracked black pepper
  • 1 teaspoon salt
  • ¼ kilo pork brain

Set B:

  • 1/4 kilo pork liver

Set C:

  • Salt
  • Pepper
  • 1 thumb-size ginger
  • 1 whole onion
  • 1/4 cup calamansi juice
  • 3 pieces long green chilies
  • 1 piece red chllie
  • 1/4 cup soy sauce
