Filipinos always love to have a bowl of hot sour soup. That’s why we have different recipes with a sour soup base. One of them is Pesa.
DISH YOU KNOW?
Pesa is another mildly sour soup, usually referring to cooking fish. The term ‘pesa’ comes from the hokkien term ‘peq + sa + hi’ used in reference to cooking fish. Pesa today could refer to dishes such as Pesang manok or Pesang baboy. Water from washing rice is used instead of just plain water for soup.
INGREDIENTS:
Set A:
- Oil
- 3 cloves garlic
- 1 whole onion
- 1 piece tomato
- ½ cup miso
- 4 tablespoon fish sauce
Set B:
- 5 cups rice washing
- 1 medium onion
- 1/4 cup ginger
- 1 piece potato
- 1 tablespoon salt
- 2 pcs talakitok
Set C:
- 2 bunches pechay
- 1/2 cup onion leeks
- 2 tablespoon fish sauce
- 1/2 teaspoon whole peppercorn
